Scott was the master of the grill tonight. I made some wild rice and a beet and asparagus salad, but the highlight was certainly the fish. Fresh whole rainbow trout were on sale at the store today, so we picked up a couple. Scott stuffed them with lemon slices and cilantro, sprinkled a little salt and threw them on the grill. The outcome was really good, the meal was simple and healthy!
I roasted some fresh beets and asparagus and tossed them with lemon & olive oil and some butter lettuce. Healthy & tasty Easter Sunday meal for our house.
