Oh good yum! I know many of you don’t like as much spice as Scott and I, but this is a fantastic recipe – and you can substitute out the habanero for a less spicy pepper and still have a delicious meal!
Grilled Salmon with Habanero-Lime Butter
1/4 cup vegetable oil
1/2 cup orange juice
3 Tablespoons freshly squeezed lime juice
1 Tablespoon tequila
1 Tablespoon lime zest
1 Tablespoon habanero, minced (can substitute seeded jalapeno for less spice)
1 clove garlic, minced
4 5 ounce salmon steaks
1/4 cup butter, softened
1/4 teaspoon garlic salt
1 Tablespoon lime juice
2 teaspoons habanero, minced (can substitute seeded jalapeno for less spice)
2 teaspoons lime zest
In small bowl, stir together oil, orange juice, 3T lime juice, tequila, 1T lime zest, 1T habanero, and garlic. Reserve a small amount for basting, pour remainder in a shallow baking dish. Place salmon in dish and coat with marinade. Cover and refrigerate 2-4 hours.
In the same bowl, mix softened butter, garlic salt, 1T lime juice, 2tsp habanero pepper, and 2tsp lime zest. Put in small container and place in refrigerator.
When ready to cook, turn grill to medium heat. Oil the grates, place salmon on grill. Cook salmon 5-8 minutes per side or until flaky, basting with marinade. Transfer to serving dish, top with the habanero butter. ENJOY!
